I have discovered mushroom and cheese pie! MY LIFE IS FULFILLED.

Also, I think I accidentally made Plague Cookies yesterday. I thought I was making a fantastic batch of sugar cookies,* but this morning I woke up with THE PLAGUE. Sore throat, sore eyes, and don’t even ask about the nose. I am just hoping no plague found its way into the delicious cookies.

Off to make tea and see if there’s any mushroom and cheese pie left! I may have the plague, but today, life is good.


*Tragically colorless, however. We will have to get to the store for food coloring for the next batch, because there is nothing more fun than dividing the frosting you’ve made into small bowls and colorizing it. This was just one of the many Early Educational Activities Mom came up with when we were small. Inevitably we would decide to experiment with mixing ALL THE COLORS, resulting in a whole lot of what Dad called “earth-tone cookies.”

OMG, I need to try that! Mushrooms and Cheese are two of my favorite food-things, and the combination, in a PIE, is just too much to pass up.

Also, we've been joking about plague cookies at work. too, because pretty much everyone there has been sick to some extent over the last couple of weeks. We're working very hard to avoid contamination, but we're still joking about "Free bronchitis with any purchase!"

The local Mediterranean restaurant makes a damn good mushroom and cheese quiche.

It is from a medieval cookbook I got from the library, but Mom and I added onions. Slice onions and mushrooms, saute, then mix them up with a few tablespoons of olive oil, half a teaspoon of mustard powder, salt, pepper, and a WHOLE LOT of cheddar cheese. We just used a storebought double crust smeared with beaten egg. Then bake for about 25 minutes at 400 degrees.

Stupid germs. They do get around.

Nice and easy, and sounds Delicious! I'll probably try that next time I go over to my Mom's. I don't have any Pie Pans here, and my oven kind of sucks.

Both my Mom and I can make really good Pie Dough, but it's such a pain that we just get Pilsbury instead. The difference between that and homemade is so not worth the extra effort.

Do you have a recipe for the mushroom and cheese pie?

Kind of. It's not a very specific recipe. You saute chopped onions and chopped button mushrooms lightly in oil, then mix them with 1/2 teaspoon of salt, a pinch of pepper, 1/4 teaspoon mustard powder, a tablespoon of olive oil, and a whole lot of grated cheese. Then you put a Pillsbury pie crust into a pie pan, coat it with beaten egg, dump the filling in, and cover it with another pie crust. Coat that with egg, too, punch some holes in it, and bake it for about 25 minuts at 450F. I'm still working on ways to make it a bit less runny--the egg and the sauteing seem to help.
