I was going to ask along this line of thought! What kind of brown sugar are you using? Dark brown sugar has a butt-ton of molasses in it and will turn food bitter if you don't compensate for that. The light version has less molasses and generally doesn't make things taste bitter unless you're really loading it in. You could also try mixing brown and regular sugar if you still want the molasses taste. Or I guess for that matter, you could just do regular sugar and separate molasses.
